Quick Truck Meal Ideas

It’s Saturday night, I put well over 600 miles of two lane on today and I’m hungry! It was raining out when I got here, which quickly put frying up a good burger out of my head so I moved on to plan B.

I keep a stash of easy heat meals that I can heat up in my crockpot (since I don’t own a microwave) under the bunk and prepackaged rice is one of them.

Add that to a couple fresh (HOMEGROWN) tomatoes, shower them with some flaky salt, grind over fresh pepper and you have yourself a darn good meal.

I generally bring my rice from home so I can season it as I like it, but this week I didn’t have (or want to spend) the time.

I usually keep 4 or 5 of these packages in the truck for occasions like this. I buy the whole grain since they are a bit better for you, although I think the salt content is a bit too high, but in the long run I still had a better meal than eating out, and I didn’t spend much money at all.

*And since I don’t have a microwave I just pop the whole unopened rice package in my crockpot, let it heat up for a half hour or so, and the rice is perfect and to top it off,  there is no mess in your crockpot.
