This is going to be a SUPER quick post, but when I put this together all I could think of was why are not more truckers cooking their own food rather than settling for truck stop crap & fast food?
Do you like truck stop food? Does it taste good to you? Bleh.
This meal above took me all of 20 minutes to make. It was a little on the costly side but you couldn’t get a meal this good in a truck stop restaurant for the price. And it was easy.
I picked up a filet mignon which was $9 bucks. I made a tomato salad which was tomatoes, fresh mozzarella balls, raw onion, garlic and fresh basil (I promise not to breathe on anyone) but at least the Vampires won’t bother me tonight.
I am stuffed to the gills. I ate a healthy meal. And it didn’t take any more time than sitting in a dirty truck stop waiting for a so-so meal would take.
Go forth and cook! I will show you the way!
Ingredients
- 1 Filet Mignon
- 1 Propane Burner
- 1 Cast Iron Pan
- Salt & Pepper
- Olive Oil or better yet Butter
Instructions
- Bring filet mignon to room temperature, salt and pepper while waiting.
- Heat cast iron pan, preferably covered in non stick tin foil.
- Add a dab of butter or olive oil
- Throw on the steak!
- Time steak for 6-8 minutes on low heat for each side.
- At 7 minutes a side I had a nice pink interior to my steak, yet a crispy crust on the outside.
- Enjoy!

What kind of dressing did you use on the salad?
Yvonne, I gave it a little drizzle of olive oil and that was it. They tomatoes had so much juice I really didn’t even notice the O/O when it was all said and done!
Maybe we should all just follow you around and eat with you…lol, Sounds absolutly deliocious. Truckstop food is the pits. No wonder most of us have health issues. Back before deregulation there used to be some great places to eat along the way to where ever you were going. Today its all fast food that is heavily processed. Nothing, and I mean nothing these places call foo is good for you, nor does it taste good.

I cook on the truck for me and my fiance. He put in a refrigerator so we could keep food better than with those coolers. I’m still pressing for an electric hotplate/grill, but the microwave does wonders with most things I put together. I keep a fold up tv tray in the truck, which gets wiped down with Lysol disinfectant wipes before any food prep takes place, I use Lawry’s dried onions in the egg omelettes. I cook some stuff at home and we take it along frozen to start with. Whatever it takes to keep us fed without spending a fortune, without subjecting us to the germs from who knows who carelessly spreading disease, and we eat healthier and better than anything we could get in the truck stop.
Great looking dish Bethany! I love cooking while on the road. I get out my fold up table, hitch on to the side of my truck (Mercedes Actros MP4) get out the propane stove and pots and pans and just cook. Nothing better then a hot meal eaten by the side of the road. In the process of getting all the bits and bobs i need to hook up a 1500 watt power inverter. Makes life so much more comfortable.
