When I'm home, or running local I like to come home and cook. The bad this is, it ends up being a late supper, usually though, hubs is willing to wait for homemade food anytime! Pizza is a little more time consuming since you have to wait for the dough to rise, but the results are always worth the wait! You can skip this step any buy pre made dough too, but I like homemade! 1 lb of White beans - I use Canellini Beans 1/2 cup Barley Water One or two good sized ham shanks (I think ham hocks are gross and the shanks have more meat) 1 Large diced onion 1 cup chopped celery 2 cloves garlic, diced 1 tablespoon Organic Better than Bouillon (Chicken flavor) Salt and pepper 2 Sprigs fresh rosemary 1 Bay leaf 1 bunch of fresh parsley Cover beans with cold water for at least a couple of hours or overnight. I run locally this week, so it was a winter wonderland all week... Bad thing was, when the roads were safe enough to snap a picture now and then the skies were dark and dreary.. How Cool Is This???
So I didn't get to going through my mail until today. Mostly, it was bills. But, today I had a gift in my mail pile from my sister in law Christy. Merry Christmas
We are up at my parents for Christmas. Stuck in a blizzard, but we couldn't be stuck in a better place! Thought I'd share a few pictures... Every year I buy these wonderful bayberry candles that I burn on Solstice. It is said that bayberry candles burned to the nub on Solstice, Christmas, or New Year's will bring health, wealth, friends, and good luck in the coming year, so I saved them to be shared with my family, which we enjoyed last night.

Moms Shrimp Dip 2 pkg Cream Cheese 1 1 1/2-inch chunk of velveeta slightly melted 1 tsp Lemon Juice 3/4 cup diced onions A couple shakes of Beau Monde Seasoning 2 tsp Lea & Perrins 1 can tiny shrimp I use my Kitchen Aid, but this can be done by hand as well. Slightly melt velveeta cheese and add to cream cheese. Mix well, the velveeta will break down as you work it. Add diced onions, beau monde, lemon juice, worcestershire sauce and continue mixing. Today is the last leg of my trip. I load cheese this afternoon and I will deliver it tonight about 20 miles from my house. Turkey Day
Since things haven't been exactly normal around here I didn't feel like going through all the brew ha ha of making a big fancy meal just for two... I did cook though, and really my meal was better than any Thanksgiving Day food I would have made... It was an easy meal, but definitely fit for kings...
