Christmas Scones

IMG_5594

Oh, if you could have smelled them when they came out of the oven! I have had a heck of a time saving these for the holidays, but so far so good. This is all my sister in laws fault-Hi Christy! Even though we don't get to spend much time together, she knows me, all too well. So, for my birthday she created a monster. She bought me this cookbook, which I would highly suggest. Sadly though, I had to go trucking shortly after I opened my present so I had to take the book with me on the truck. Let me just say it was a

Just another Day

IMG_4849

For me, yesterday was just another day. Luckily, my parents and hubs thought otherwise because it was my birthday. My parents took some time off and visited my brother, sister in law and niece in Missouri for a few days and then headed back up north stopping off at our place to spend a few days with us which was perfect. We have dined like kings every night since they arrived, but I thought I would share my birthday dinner with you. Mom helped me with all of the meals, and we had a blast in the kitchen together. The

Creamed Chicken

IMG_5520

Years ago, I learned this recipe from my mother. I use to haul frozen chicken for Wendy's fast food restaurants, and every once in a while the place I would deliver to would smash a case or more cases would be shipped than ordered and they would refuse them. The driver would be given the product to get rid of or take home. I was smart and took it to my mom who is such a great cook. This is one of the meals she would whip up with the chicken, and it always tasted so good! Now, Creamed Chicken is something I like to whip

Enchilada Pie

As I get older, when looking back on growing up and being married, I'm noticing I have formed a style all my own when it comes to cooking and our meals here on the farm. Even though my mother couldn't keep me in the house long enough to ever cook with her when I was a kid, (I had boys to chase and dirt bikes & horses to ride) I'm very lucky her awesomeness in the kitchen somehow rubbed off on me. With the busy schedule I keep and what I see as important for any meal, I have formed my own style but it is still my

Homemade Donuts!

I've mentioned it before. I'm in the nesting mode here at home. The cold weather has me wanting to do nothing but cook, cook, cook. Baking is even something that I'm indulging in a bit more this year and as you can see above, donuts I have been craving! So, I ordered this pan from King Arthur Flour, borrowed their recipe and I have fresh, baked, not fried donuts!! I just gave a light sprinkle of cinnamon and sugar and they were divine! Baked Donut Recipe Borrowed from King Arthur Flour 1 cup Round Table Unbleached

I Made Soup!

Today I'm blogging from sunny Arizona and I almost feel funny writing this while sitting 89 degree weather, but I will anyway. This week found me home for oh, only about 24 hours. It would have been even shorter if hubs hadn't hooked onto my wagon and delivered my melons for me. Since he was so good to me, I had no choice but to stay home, and enjoy a glorious fall afternoon. For some reason, I thrive on days like this. I should have been tired and doing nothing more than laying around on my sweet couch, blogging like

French Apple Tart

One of the biggest things I love to do when I come home off the road, is make our house smell like a home. And of coarse, food always does the trick. Since it's that time of year again (the time I start feeling like I should be homemaking and getting ready for winter) it makes me even happier to do it. Usually, I'm not much of a baker, but I do love to make a good pie. They are easy, and there is nothing like walking into a house when a fresh pie has just been pulled out of the oven. Divine. This time around I

When Life Gives you Lemons

Make Grilled Tuscan Lemon Chicken! This is my absolute favorite meal I've made in I don't know how long. Although, most of my meals I make are a favorite in one way or another, this chicken turned out so moist and juicy, I'm thinking I will never make another kind of grilled chicken again! This recipe is from a book from the Barefoot Contessa (Ina Garten) who just happens to be my idol! The dish does need a little prep work, but the results are well worth the time in the kitchen! Side note: I would have never known

BBQ’D Pork Chops, Onion & Skillet Potatoes

I'm like my mother. My mother has always fed us good homemade food. She has always taken care of us whether she was feeling up to it or not. It's just what she did, and still does for my father (and us when we show up on her doorstep). I'm the same way... Wednesday was my first day back home after my El Paso trip, and I was tired. That doesn't seem to stop me though since I always feel like I need to take care of things at home. Take care of hubs and feed him good food. So, that's what I did. I just knew it had to be

Pasta Salad

pasta+chick

Another easy meal for me is pasta salad. Hubs and the boys love this, so I thought I would share it with you too. Yesterday it was 90+ degrees out, and I didn't feel like going to too much bother making a meal. Instead, a fried chicken breast and cold pasta salad was on the menu. I fried 3 chicken breasts, one of which went into the salad and the other two were for us. I have used LeCreuset cast iron enamelware for a few years now, and I love it. But, my mother sent me home with one of her cast iron skillets a while
