I'm in love with New Mexico. You knew that right? It's not just the land that holds my attention so. It's the Chile pepper too. I love it. I could eat it daily. Or more. I could happily move to New Mexico just for the food, even if the scenery was not there.... I could happily eat burritos and only food filled with Hatch green chile peppers the rest of my life! For me, yesterday was just another day. Luckily, my parents and hubs thought otherwise because it was my birthday. My parents took some time off and visited my brother, sister in law and niece in Missouri for a few days and then headed back up north stopping off at our place to spend a few days with us which was perfect.
